This recipe is quick and combines all sorts of delicious fall flavour!
2 | Dempster’s® Apple Pie Bagels |
4 | Turkey Cutlets (scaloppini) |
11/2 cup | Flour |
2 | Eggs |
Salt and Pepper, to Taste | |
1/4 cup | Butter |
2 | Fresh Apples, such as McIntosh |
2 tbsp | Sugar |
1/2 cup | Water |
1 | Cinnamon Stick |
Make applesauce: Peel and finely dice apples. In a saucepan, combine apples, sugar, water and cinnamon stick. Cover, and cook over medium heat for about 20-25 minutes, until apples are soft. Remove cinnamon stick and mash with a fork or potato masher.
Make schnitzel: In a food processor, pulse the Apple Pie Bagels into coarse crumbs. Transfer the bagel crumbs to a shallow bowl. In a separate bowl, beat together the eggs. Place the flour in a shallow bowl or lipped plate. Season each turkey cutlet generously with salt and pepper. One at a time, dredge each cutlet in the flour, dip it in the egg mixture, then coat it evenly with the bagel crumbs.
Melt the butter in a large non-stick skillet over medium-high heat. Once heated, add the turkey cutlets and cook until golden brown and cooked through, about 2 minutes for the first side. Turn the cutlets over and cook for 1 minute on the other side. Remove the cutlets from the pan and serve with the apple sauce.
