Family for me is what the Holiday's are all about. I try to make meals that everyone can enjoy that aren't too time consuming but are elegant and flavourful, so I can spend more time enjoying my Grandkids. This tender and moist pork roast takes just minutes to prepare. Crisp apples and bright red cranberries add taste and colour to this Holiday Stuffing. It can be served potluck style or sit down. However you'd like to serve this dish, you will wow your guests and it didn't take all day.


1 Maple Leaf Prime Pork Tenderloin
1 tbsp. Extra Virgin Olive oil
1 tbsp. paprika
1 tsp salt
1 tsp garlic powder
1 tsp savory or sage or rosemary
3/4 cup dried bread broken into bite size pieces
1/2 Ambrosia or Macintosh Apple diced small
1/8 cup dried cranberries or fresh
1 tsp savory or sage
1/4 chicken broth
2 oz crumbled herb goat cheese
1 cup gravy


Rinse the tenderloin and pat dry.
Cut a deep slit through the top of the tenderloin 1" from the bottom and 2" from the sides.
Rub the oil all over the tenderloin.
Sprinkle and rub on the paprika, salt, garlic powder and savory, including the slit.
Pour the broth over the bread to soak.
Add all of the ingredients except the gravy, toss to mix.
Stuff the loin with as much mixture as possible.
Bake in a preheated 350F oven lined with parchment paper or foil for 40 min or until juices run clear.
Tent with foil for 5-8 minutes before thinly slicing.
Serve with extra gravy.


* I like to save and freeze extra gravy so that I have it on hand when making roasts that don't have their own gravy.
