What is better than crispy apples, salty bacon, sharp cheddar and sweet caramelized onions coming together as a hot grilled panini? Paired with a simple spicy arugula salad is a truly satisfying lunch or light dinner.

|1||Granny smith apple sliced thinly|
|1||Jar caramelized onions|
Preheat a seasoned grill pan or griddle over medium high heat. Combine mayo and 1-2 spoonfuls of caramelized onions. Set aside.
Spread 1 slice of bread with some onion mayo, then top with 1 slice cheddar, bacon, apple slices (about half an apple per sandwich), then 1 more slice of cheddar, finishing with another mayo slathered slice of bread. Butter the outsides of bread and transfer to the hot grill.
Grill about 2 to 3 minutes per side. Cut in half and serve immediately.
