This easy to make and versatile dish has great flavour and texture when combined with the chopped almonds mix.
|1||Maple Leaf Prime® Pork Tenderloin|
|Salt and pepper|
|1 tbsp||(15 mL) Honey mustard|
|1 tbsp||(15 mL) Mayonnaise|
|1 tsp||(5 mL) Fresh chopped thyme|
|.5 tsp||(2 mL) Orange zest|
|1 cup||(80 mL) Finely chopped almonds|
|2 tbsp||(30 mL) Panko breadcrumbs|
|2 tbsp||(30 mL) Chopped fresh parsley|
PREHEAT oven to 400°F (200°C).
TRIM any excess fat or silver skin from the pork tenderloin. Season with salt and pepper and place on a small baking sheet.
MIX honey mustard, mayonnaise, thyme and orange zest. Rub over the entire tenderloin. Place almonds, parsley and panko crumbs in a shallow dish. Mix to combine. Roll the tenderloin in the crumb mixture to coat. Return to the baking sheet, tuck the thinner ends underneath to ensure even cooking and roast for 25 minutes or until the internal temperature reaches 160°F (71°C). The crust should be golden brown. Garnish with fresh thyme and serve.
