A great Acadian family meal from right here in the Maritimes.
|1 tbsp||Canola Oil|
|4||Maple leaf Prime boneless, skinless chicken thighs, cubed|
|1||small yellow onion, finely chopped|
|6||cloves garlic, finely chopped|
|2 tbsp||Cajun seasoning|
|1/2 cup||chicken stock|
|1 1/4 cups||rice|
|2 cups||chicken broth|
|1 can||diced tomatoes|
|1/2||salt pepper to taste|
|1||green pepper, chopped|
|2 tsp||dried thyme|
Heat the oil in a nonstick skillet set over medium heat. Add the
chicken, onion, garlic and Cajun seasoning. Cook for 10 minutes or until
browned. Add the chicken broth; simmer for 1 minute.
Stir in the rice until well coated. Add the stock, tomatoes, salt and pepper; bring to a boil. Stir in the green pepper. Add thyme.
Cook, covered, for 15 minutes or until rice is tender all the liquid is absorbed. Adjust salt and pepper to taste.
