This delicious and nutritious vegetarian sandwich combines thinly sliced red and yellow bell peppers, portobello mushrooms and red onions. Serve on Dempster's® WholeGrains™ Ancient Grains Bread with fresh hummus.
|2||Slices red onion (cut in rings)|
|60 g||Each red and yellow bell peppers, thickly sliced|
|1||Portobello mushroom, thickly sliced|
|15 ml||Olive oil|
|Salt and pepper|
|4||Slices DEMPSTER’S® WholeGrains™ Ancient Grains Bread or BON MATIN® 6 Grain bread|
HEAT sandwich grill to medium.
COMBINE vegetables with olive oil and season with salt and pepper.
PLACE sliced vegetables on grill for 3-5 minutes, or until grill marks are visible and vegetables are fork tender.
SPREAD 1 tbsp (15 mL) hummus on each slice of bread.
ARRANGE sliced vegetables on top of 2 slices of bread.
TOP with remaining 2 slices of bread. Cut on the diagonal and serve immediately.
