A quick and easy brunch idea.
|8||slices whole grain bread, toasted|
|1/2||small onion chopped|
|1/2||medium tomato sliced|
|1/2 cup||Maple Leaf Ham, small cubed|
|fresh ground pepper|
|ketchup or salsa|
In a arge covered skillet add a small amount of oil and cook ham and onions until onions are soft. In a large bowl whisk 5 large eggs and add to skillet. Fresh ground pepper to taste. Layer tomatoes on top, cover and cook for 5-8 minutes or until egg is cooked through.
Toast 8 slices whole grain bread. Divide omelette into 4 and place each division between 2 slices of toast. Garnish with sweet pickles, and dip sandwich into ketchup or salsa while eating.
