Creamy, decadent risotto with ham, peas and white Cheddar.
|2 tbsp||Olive oil|
|1/3 cup||Diced onion|
|1/2 cup||Diced red pepper|
|2||Maple Leaf® Ham Steaks, diced|
|1 cup||Ready prepared Alfredo sauce|
|4 cups||Cooked Basmati rice or 2 (250 g) packages Ready Prepared Express Basmati rice|
|1/2 cup||Frozen peas or chopped, blanched asparagus|
|Salt & pepper|
|1 cup||Grated white cheddar cheese|
HEAT oil in a large skillet over medium-high. Add onion, pepper and ham. Cook for 2-3 minutes or until the onion is soft. Stir is Alfredo sauce, milk, basmati rice and peas or asparagus. Cook for 5-6 minutes or until heated through. Season with salt and pepper. Just before serving, stir in half the Cheddar cheese. Divide between serving bowls and sprinkle with the remaining cheese.
Garnish with additional cheese.
