This is a dish that I came up with the day before grocery shopping day.
Odds and ends that I put together and created an explosion of flavours.
|chicken Pkg||(about 12 thighs)|
|2 cups||of peas and carrots|
|Equal||parts of red and white wine (no water was used)|
|1 tsp||of cumin|
|1 tsp||of paprika|
I don't use a recipe I eyeball everything but here it goes ....I peel potatoes and cut them into bite sized squares. Sautee onions, garlic and olive oil, add 2 heaping table spoons of pimento paste, about a table spoon of cumin, about a teaspoon of paprika, salt, pepper, chicken knorr to taste (depending on how much sauce you're making which also depends on how much chicken you have) once the onions are sautéed and you get that golden super attractive golden colour chop about 3 or 4 Roma tomatoes add them into the mix, and about 2 cups of peas and carrots. Place your chicken into the pot and add white and red wine equal parts,,just enough to cover the chicken. Taste the sauce and if it needs anything, add it in only taste after its started to boil and has been stirred a few times. Once it starts boiling turn off the heat, preheat your oven to 450 take a deep pan take the chicken out with tongs place them neatly, add your washed potatoes on top of the chicken (spread them out neatly) then pour all that sauce and goodness all over the chicken...you should have a couple of inches of sauce....bake for an hour occasionally flipping the potatoes and chicken every once in a while and bam! You're done when you can easily slide the knife into the potatoes and the chicken is cooked
