Grown less than a mile down the road I visited this turkey a couple times a month. What a wonderful way to celebrate a special meal with a locally pasture raised free run turkey.


1 turkey
1/4 cup coconut oil (not virgin)
1 large carrot quartered
2 large onions quartered
salt and pepper


When preparing a fresh turkey you must wash it inside and out. Pat it dry and brine it inside and out by rubbing salt all over / inside the turkey. You may add pepper or other spices at this step. Once this step is done store it in the refrigerator overnight for up to 12 hours.

Preheat over to 400F

Place prepared vegetables inside the turkey - this step can be replaced with stuffing. Follow directions on stuffing if using that method.

Melt coconut oil and brush over the outside of turkey (you can substitute for butter or oil of choice).
Place turkey in roasting pan with the breast down to ensure they are nice and moist when done cooking.

The turkey can now go in the oven, uncovered and left for 30 minutes.
Reduce heat to 325F for 1 hour 45 minutes and finally 250F for the remaining time.
*Note recommended internal temperature is 170F for thighs or 165F for breast.

While the turkey is cooking prepare any other side dishes that will compliment your delicious turkey.
