|1/3 cup||buttered breadcrumbs, prepared|
|1 1/2 cups||macaroni and cheese, prepared and warmed through|
|1/2 cup||cheddar, shredded|
Preheat oven to 375 degrees. Lightly spray a 12 cup muffin pan. Gently press each slice of bologna into cup and using your fingers gently spread out. Bake in oven for about 15 minutes or until bologna is golden brown around the edges and the bottom is set. Allow to cool for about 2 to 3 minutes. Remove onto cooling rack. Divide macaroni and cheese between bologna cups. Top with cheddar and buttered bread crumbs. Garnish with parsley. Serve immediately.
Make macaroni and cheese the day ahead and heat up when ready to use.
