this is easy but impressive.
|1/2 Pkg||fresh baby spinach|
|2 tbsp||Feta Cheese|
|2 tsp||finely diced Onion|
|1/2 tsp||Dry Dill|
|2||Slices of thinly sliced Prosciutto|
Wash spinach and shake off all excess water. Microwave for 1 minute. Rinse with cool water to cool spinach. Drain and use paper towel to squeeze out all moisture. You will end up with a surprisingly small amount of spinach. Lightly chop.
Add to spinach, onion, dill and feta. Add Salt and pepper to taste.
Butterfly and tenderize chicken breast.
brush or spray inside of breast with olive oil. Salt and pepper to taste.
divide spinach mixture evenly and spread on inside of tenderized breasts.
Roll breast keeping the filling in the centre of breast. Wrap with prosciutto slice.
Spray prepared breast with olive oil.
Cook 20 min @ 400*
