make it, bake it and forget it! Easy chicken recipe to prepare leaving you with more time to finish up some unfinished business!
|2||Large Chicken Breasts, bone in and skin on|
|3||Large potatoes cut in thick wedges|
|1||Can of Herb n Spiced Diced tomatoes|
|1||Sweet Onion Diced|
|2||Cloves Garlic Sliced|
|1/2 cup||Slivered Almonds|
|2 tsp||Poultry Spice|
|1 tsp||Cracked Black Pepper|
|4||Full Sticks Rosemary|
Preheat oven to 325 Degrees Fereinheight
In a small glass baking dish place onions an potatoes on bottom.
Pour can of diced tomatoes over top using only half the juice in the can, the rest put aside for if needed to add more moisture while baking.
Put Bay Leaf in Center of potato, onion and tomato mixture and 2 sticks of rosemary on top..
Place Chicken Breasts bone down, skin up on top of potatoes and Rosemary. Evenly distribute Garlic Slivers, Almond Slivers and all spices over entire dish.
Strip 2 sticks of Rosemary and sprinkle Leaves over dish and throw in the remaining sticks in dish as well.
Bake Uncovered for approx. 45 mins - 1 hour, periodically basting with tomato juices from dish. Not enough moisture add remaining tomato juice from can!
Fall apart moist chicken and yummy tomato potatoes!! serve with a fresh mixed green salad
