This is a great conversation piece at the Easter Brunch table, Also a great Brunch idea for two. Romantic and whimsical! The green onion is used as a garnish handle for the basket. Serve Dempster's Whole Grain Toast and fresh berries on the side. Happy Easter!


4 slices Maple Leaf Deli Ham
4 Mushrooms-chopped
2 tbsp green onions-chopped
4 tbsp red pepper-chopped
3 tbsp green pepper-chopped
1 tbsp butter
1 pinch salt
1 pinch pepper
2 eggs
2 approx 5-6 inch long green onions-for Basket Handle garnish
2 slices-Dempster's Whole Grain Multi Grain bread
1 pinch pepper
2 tsp Aged Cheddar cheese-grated
4 Strawberries-garnish on side
4 raspberries-garnish on side
2 tbsp soft butter-for toast


Using non stick spray or butter, lightly coat two 3 inch by 3 inch ramekins. Preheat oven to 325 degrees F. Place 2 thin-medium slices of Maple Leaf ham in each ramekin overlapping to create a bottom. In a small fry pan, add 1 tbsp butter, melt, add mushrooms, peppers, chopped green onions, salt and pepper. Saute until soft. Remove and evenly divide into each ramekin over the ham. Gently crack an egg over each. Try not to break the yolk. Sprinkle 1 tsp cheese over each egg. Sprinkle a pinch of black pepper over each egg . Place in oven on a cookie sheet and bake approx 8 minutes. If you like your egg hard then cook another 3 minutes approximately. Take them out of the oven, place green onions in each ramekin as to make a handle. Be careful, ramekins are hot. Toast the bread, butter them. Plate the Ham & Egg Easter Baskets with toast and berries on the side. Enjoy!
