This is ooey, gooey, goodness! Crunchy, salty, sweet, cheesy and a little greasy, okay a lot!

Ingredients

2 slices Dempster's white bread slices
2 tbsp butter-for toast
1/2 onion-peeled-sliced into rings
2 tsp olive oil-for onions
1 tbsp Balsamic vinegar reduction-for onions
1 tbsp butter-for onions
1 pinch salt-for onions
4 slices tomato
4 slices aged cheddar
1 free range egg
1 pinch ground black pepper
1 tsp butter for skillet

Directions

Slice tomato. Slice cheese. Toast bread until golden, Butter one side of both pieces, set aside. Slice onion. Heat up a skillet (fry pan) add 1 Tbsp butter, olive oil, Balsamic vinegar, salt and sliced onion. Turn to low and cook until soft and caramelized, stirring frequently. Take off heat and set aside. In same pan gently add egg and cook sunny side up. Put together sandwich, 1 piece buttered toast, caramelized onions, tomato slices, cheese slices, top piece toasted buttered toast, butter side down. Take egg out of skillet, set aside. Turn up heat to medium add 1 tbsp butter, let melt, swirl around, add sandwich. Grill both sides just until cheese melts. Do not squish sandwich down with spatula. Flip sandwich carefully. Take off heat and top with egg and pepper. Bonn Appetit!

Notes

You may need a bib or at least 2 napkins for this one.
