Treat yourself to delicious slow cooked chicken simmered in Pomegranate juice with toasted walnuts and saffron.This is great as leftovers as well.
|4||Maple Leaf Prime Naturally® Chicken Drumsticks or Thighs|
|.25 cup||(60 mL) Lime juice|
|1 tbsp||(15 mL) Vegetable oil|
|2 cups||(500 mL) Ground toasted walnuts|
|.5 tsp||(2 mL) Cardamom|
|.5 tsp||(2 mL) Cinnamon|
|.5 tsp||(2 mL) Saffron, steeped in 1 tbsp (15 mL) hot water|
|4 cups||(1 L) Pomegranate juice|
|(125 mL) Pomegranate seeds|
|Chopped fresh parsley|
SCORE the chicken in several places using a sharp knife. Place chicken in a shallow pan and pour lime juice over top. Massage the lime juice into the chicken. Cover and refrigerate for 30 minutes or overnight.
HEAT oil in a large skillet over medium-high heat. Add chicken and brown for 2-3 minutes on each side. Add onion and cook 10-15 minutes or until golden. Sprinkle nuts over the chicken along with the spices. Pour in pomegranate juice and stir to combine. Bring to a boil. Reduce heat, cover and simmer for 35-40 minutes or until the chicken starts to pull off the bone and the internal temperature has reached a minimum of 185°F (85°C).
SPRINKLE with pomegranate seeds and chopped parsley before serving.
Substitute pomegranate juice with 5 tbsp (75 mL) pomegranate syrup diluted in 4 cups (1 L) water.
