About this Recipe

Try making this family favourite at home, using Maple Leaf Ready Crisp® Bacon and Dempster's® Tortillas! Sprinkle with shredded Monterey Jack cheese and serve with salsa and sour cream.

Ingredients

10 ml Butter
50 ml Each finely chopped red and yellow pepper
75 ml Finely chopped onion
2 ml Chili powder
4 Eggs
6 Slices MAPLE LEAF Ready Crisp® Bacon
2 Large plain DEMPSTER’S® Tortillas
50 ml Shredded Monterey Jack cheese
Salsa
Sour cream

Directions

MELT butter in a non-stick skillet over medium heat. SAUTÉ peppers, onion and chili powder for 2 to 3 minutes. Meanwhile, lightly beat eggs. ADD eggs to skillet and cook for 2 to 3 minutes, stirring frequently until eggs are cooked through. Meanwhile, heat bacon according to package directions. DIVIDE bacon and egg mixture evenly between tortillas. Sprinkle with cheese and roll up. SERVE with salsa and sour cream.
