Ingredients

2 Slices Dempster's Whole Grains Bread
1 tbsp soft butter
4 Maple Leaf Bacon rashers
3 tbsp cream cheese
2 tbsp chopped green jalapeno chilies-from can
3 medium slices aged cheddar cheese

Directions

Cook bacon in fry pan until crispy. Transfer to a paper towel to absorb grease. Keep the bacon grease in fry pan and set aside. Lightly toast bread in toaster. Build your DIY Game Day Sandwich: 1 slice toast, buttered, bacon rashers, cheddar cheese slices, green chilies, top slice of toast with the cream cheese on the inside. Heat up the fry pan with the bacon drippings, add sandwich and grill on both sides until golden and cheese has melted. Slice and enjoy!

Notes

You can make this sandwich with fresh chopped jalapenos if you prefer but the strength of heat will be very strong. Roasting, de-seeding and skinning the fresh peppers will make them more mild. I prefer the canned chopped chiles, the strength of heat and flavor is just perfect for me and a lot easier and faster to deal with.
